The composer died over 50 years ago in 1972 – shouldn’t her works be in the public domain in Canada? They must be in the public domain in the US too, since her compositions are from before 1929 (copyright term is 95 years after publication).

Canada is no longer a Life + 50 country across the board, so anyone who died before 1972 (yes by one year) starting last year in 2023 is under copyright until 2043 at the earliest. Canada is now a Life + 70 country for anyone who died after 1971.
However any works that were first published before 1929 can be uploaded to the USA server or if there are works that have no renewals on them published between 1929-1963.

Since the copyright term expired in the country of origin quite a long time ago, are the compositions confirmed to be in the public domain in the EU due to the rule of the shorter term?

Thats only if the point of origin was published in a USA city, then RoST will usually apply to the EU.
